Apple Cider Pork with Mashed Sweet Potatoes Recipe

  • 2 pounds pork shoulder
  • 1 cup apple cider
  • 2 onions, sliced
  • 4 cloves garlic, minced
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • 2 pounds sweet potatoes
  • 1/2 cup butter
  • 1/4 cup milk
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large oven-safe pot, sear the pork shoulder on all sides until browned.
  3. Add the sliced onions and minced garlic, then pour in the apple cider.
  4. Sprinkle thyme and rosemary over the top.
  5. Cover and transfer to the oven; bake for 3 hours or until tender.
  6. While the pork is cooking, peel and chop the sweet potatoes.
  7. Boil sweet potatoes in salted water until tender, about 15 minutes.
  8. Drain and mash the sweet potatoes with butter and milk. Season with salt and pepper.
  9. Once the pork is done, let it rest before slicing.
  10. Serve the pork with mashed sweet potatoes on the side.
