  • 1 pound salmon, cut into bite-sized pieces
  • 1 cup breadcrumbs
  • 2 eggs, beaten
  • 1/2 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 2 tablespoons Sriracha
  • 2 cups cooked rice
  • 1 cup mixed vegetables (broccoli, bell peppers, carrots)
  • 2 tablespoons sesame oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix the salmon pieces with breadcrumbs and beaten eggs.
  3. Place the salmon bites on a baking sheet and bake for 15-20 minutes until golden brown.
  4. In a separate bowl, combine mayonnaise, sweet chili sauce, and Sriracha to make the Bang Bang sauce.
  5. In a pan, heat sesame oil and sauté the mixed vegetables until tender.
  6. Serve the salmon bites over cooked rice, topped with sautéed vegetables and drizzled with Bang Bang sauce.
