  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup orange juice
  • 1 cup fresh cranberries, chopped
  • 1/2 cup walnuts, chopped (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, mix the flour, baking powder, baking soda, and salt.
  3. In another bowl, cream together the butter and sugar until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition. Stir in the vanilla and orange juice.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in cranberries and walnuts, if using.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  8. Allow to cool in the pan for a few minutes before transferring to a wire rack to cool completely.
