- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup orange juice
- 1 cup fresh cranberries, chopped
- 1/2 cup walnuts, chopped (optional)
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a bowl, mix the flour, baking powder, baking soda, and salt.
- In another bowl, cream together the butter and sugar until light and fluffy.
- Add the eggs one at a time, beating well after each addition. Stir in the vanilla and orange juice.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in cranberries and walnuts, if using.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
- Allow to cool in the pan for a few minutes before transferring to a wire rack to cool completely.
