Blackened Cajun Chicken Alfredo

  • 2 chicken breasts boneless, skinless
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon olive oil
  • 8 ounces fettuccine pasta
  • 1 cup heavy cream
  • 1 cup parmesan cheese, grated
  • 2 tablespoons fresh parsley, chopped
  • salt and pepper to taste

Instructions

  1. Cook the fettuccine according to package instructions. Drain and set aside.
  2. Season the chicken breasts with Cajun seasoning.
  3. In a skillet, heat olive oil over medium heat. Add the chicken and cook until blackened and cooked through, about 6-7 minutes per side.
  4. Remove chicken from the skillet and slice.
  5. In the same skillet, add heavy cream and parmesan cheese, stirring until smooth.
  6. Toss the cooked fettuccine in the sauce until well coated.
  7. Serve the pasta topped with sliced chicken and chopped parsley.
