Blueberry Matcha Muffins

  • 1/2 cup almond flour
  • 1/2 cup sugar
  • 2 teaspoons matcha powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 cup fresh blueberries

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, whisk together the all-purpose flour, almond flour, sugar, matcha powder, baking powder, and salt.
  3. In another bowl, beat the eggs and then add the milk and vegetable oil. Mix well.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Gently fold in the blueberries.
  6. Fill each muffin cup about 2/3 full with the batter.
  7. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  8. Let cool for a few minutes before transferring to a wire rack.

Notes

  • For extra flavor, you can add a splash of vanilla extract to the wet ingredients.
  • These muffins freeze well; just thaw them before serving.
