  • 2 cups diced potatoes
  • 1 cup shredded cheddar cheese
  • 4 cups vegetable broth
  • 1 cup milk
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, melt butter and sauté onion and garlic until soft.
  2. Add the diced potatoes and vegetable broth. Bring to a boil.
  3. Reduce heat and simmer until potatoes are tender.
  4. Add broccoli and cook until tender, about 5 minutes.
