  • 1 pound ground turkey
  • 4 slices turkey bacon
  • 1 cup cooked quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cup mixed greens
  • 1/2 cup diced cucumbers
  • 1/4 cup barbecue sauce
  • 1 tablespoon olive oil
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Cook the turkey bacon in a skillet until crispy. Remove and chop into bits.
  2. In the same skillet, cook the ground turkey until browned and fully cooked.
  3. In a large bowl, combine the cooked quinoa, cherry tomatoes, mixed greens, diced cucumbers, and cooked turkey.
