Cajun Potato Soup

A delicious and easy Cajun potato soup recipe with a comforting twist of turkey bacon.

Ingredients

  • 4 large potatoes, peeled and diced
  • 6 strips turkey bacon, chopped
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 teaspoons Cajun seasoning
  • Salt to taste
  • Pepper to taste
  • 2 tablespoons green onions, chopped

Instructions

  1. In a large pot, cook turkey bacon over medium heat until crispy. Remove and set aside.
  2. Add onion and garlic to the pot, sautéing until translucent.
  3. Stir in potatoes and Cajun seasoning, cooking for another 2 minutes.
  4. Pour in the chicken broth and bring to a boil. Reduce heat and simmer until the potatoes are tender, about 15 minutes.
  5. Blend the soup until smooth, then stir in the heavy cream.
  6. Season with salt and pepper, then add the turkey bacon back in. Serve hot, garnished with green onions.

Notes

  • For a vegetarian option, substitute turkey bacon with smoked paprika for flavor.
  • This soup can be thickened with a cornstarch slurry if desired.
