Caramel Brownie Cheesecake

  • 1 cup graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 2 cups creamy cheesecake filling
  • 1 cup brown sugar
  • 4 ounces bittersweet chocolate, chopped
  • 1 cup sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup caramel sauce
  • 1 pinch salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine graham cracker crumbs and melted butter. Press into the bottom of a springform pan.
  3. In a saucepan, melt the chocolate over low heat. Remove from heat and let cool slightly.
  4. Beat together the sugar and eggs until light and fluffy. Stir in melted chocolate and vanilla.
  5. Pour the cheesecake filling over the crust and smooth the top.
  6. Bake for 45-50 minutes or until the center is set.
  7. Remove from the oven and let cool. Drizzle with caramel sauce before serving.

Notes

  • For a salted caramel flavor, sprinkle coarse sea salt over the caramel drizzle.
