Caramelized Onion Pasta with Chilli Oil

  • 3 large onions, sliced
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red chili flakes
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Cook the pasta according to the package instructions until al dente.
  2. In a large pan, heat olive oil over medium heat and add sliced onions.
  3. Cook onions, stirring frequently, until they are caramelized and golden brown, about 15-20 minutes.
  4. Add salt, black pepper, and red chili flakes to the onions, stirring to combine.
  5. Once pasta is cooked, drain and add it to the caramelized onion mixture.
  6. Toss the pasta with the onions and add parsley and Parmesan before serving.

Notes

  • For a vegetarian option, omit the Parmesan cheese or use a plant-based alternative.
