  • 1 cup all-purpose flour
  • 1/2 cup vegetable oil
  • 4 large eggs
  • 2 teaspoons baking powder

  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 16 ounces cream cheese
  • 1 cup powdered sugar
  • 1 teaspoon lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix grated carrots, sugars, oil, and eggs.
  3. In another bowl, combine flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients into the wet mixture until well combined.
  5. Pour half the batter into a greased springform pan.
  6. In a bowl, beat cream cheese, powdered sugar, and lemon juice until smooth.
  7. Spread the cream cheese mixture over the batter in the pan.
  8. Top with the remaining carrot cake batter.
  9. Bake for 55-60 minutes or until a toothpick comes out clean.
  10. Let it cool before serving.
