Cheddar Garlic Herb Potato Soup

A creamy and flavorful potato soup infused with cheddar, garlic, and herbs, perfect for cozy evenings.

Ingredients

  • 2 tablespoons butter
  • 1 cup diced onion
  • 3 cloves garlic, minced
  • 4 cups diced potatoes
  • 4 cups vegetable broth
  • 1 cup shredded cheddar cheese
  • 1/2 cup heavy cream
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Instructions

  1. In a large pot, melt the butter over medium heat.
  2. Add the diced onion and garlic, cooking until the onion is translucent.
  3. Add the diced potatoes and vegetable broth, bring to a boil, and then simmer until the potatoes are tender.
  4. Use an immersion blender to puree the soup until smooth.
  5. Stir in the cheddar cheese and heavy cream, then season with thyme, rosemary, salt, and pepper.
  6. Heat through and serve warm.

Notes

  • For a thicker soup, blend longer or add more potatoes.
