Chicken and Sweet Potato Bowls

Ingredients

  • 2 chicken breasts
  • 2 medium sweet potatoes, diced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups kale, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, toss the diced sweet potatoes with olive oil, garlic powder, paprika, salt, and pepper.
  3. Spread the sweet potatoes on a baking sheet and roast for 25 minutes.
  4. While the sweet potatoes are roasting, season the chicken breasts with additional salt and pepper.
  5. In a skillet over medium heat, cook the chicken for 5-7 minutes on each side until cooked through.
  6. Remove the chicken from the skillet and let it rest for a few minutes before slicing.
  7. In the same skillet, add the chopped kale and sauté until wilted.
  8. Assemble the bowls by layering sweet potatoes, sliced chicken, and sautéed kale.
