Chipotle Gouda Scalloped Sweet Potatoes

This creamy and spicy dish features layers of sweet potatoes and chipotle gouda, topped with crispy turkey bacon for a delightful twist.

Ingredients

  • 2 pounds sweet potatoes
  • 1 cup chipotle gouda cheese, shredded
  • 4 ounces turkey bacon, cooked and crumbled
  • 1 cup heavy cream
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Peel and slice the sweet potatoes into thin rounds.
  3. In a baking dish, layer half of the sweet potatoes on the bottom.
  4. Sprinkle half of the chipotle gouda and turkey bacon over the sweet potatoes.
  5. In a bowl, combine the heavy cream, garlic powder, onion powder, smoked paprika, salt, and black pepper.
  6. Pour half of the cream mixture over the layered sweet potatoes.
  7. Repeat the layers with the remaining sweet potatoes, cheese, bacon, and cream mixture.
  8. Cover with foil and bake for 30 minutes.
  9. Remove the foil and bake for another 15-20 minutes, or until golden and bubbly.

Notes

  • For additional spice, add more chipotle gouda or a dash of cayenne pepper.
