  • 1/2 cup unsweetened cocoa powder

  • 1/2 cup brewed coffee, cooled
  • 1/2 cup buttermilk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup unsalted butter, melted
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1/4 teaspoon espresso powder

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a large bowl, whisk together the flour, cocoa powder, granulated sugar, brown sugar, baking powder, baking soda, and salt.
  3. In another bowl, combine the brewed coffee, buttermilk, eggs, and vanilla extract.
  4. Slowly add the wet ingredients to the dry ingredients, mixing until just combined.
  5. Stir in the melted butter until well incorporated.
  6. Fill the cupcake liners about 2/3 full with the batter and bake for 18-20 minutes.
  7. Let the cupcakes cool completely before frosting.
  8. To make the frosting, beat the heavy cream, powdered sugar, and espresso powder until stiff peaks form.
  9. Frost the cooled cupcakes with the whipped cream mixture.

Notes

  • For extra flavor, add chocolate shavings on top of the frosting.
