Chocolate Raspberry Mousse Cake

A rich and indulgent dessert that combines the lusciousness of chocolate mousse with the tartness of fresh raspberries.

  • 1/2 cup unsalted butter
  • 1 cup granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 2 cups fresh raspberries
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a cake pan.
  2. Melt the dark chocolate and butter together in a double boiler.
  3. In a bowl, whisk together sugar, eggs, vanilla extract, and salt until light and fluffy.
  4. Fold the melted chocolate mixture into the egg mixture.
  5. Pour the batter into the prepared cake pan.
  6. Bake for 25-30 minutes or until a toothpick inserted comes out clean.
  7. Allow the cake to cool completely.
  8. In a separate bowl, whip the heavy cream with powdered sugar until soft peaks form.
  9. Layer cake with whipped cream and fresh raspberries.
