Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and trim the Brussels sprouts and green beans.
  3. In a large bowl, toss the vegetables with olive oil, salt, pepper, and garlic powder.
  4. Spread the vegetables on a baking sheet in a single layer.
  5. Roast for 20-25 minutes until tender.
  6. Meanwhile, prepare the mashed potatoes according to package instructions.
  7. Once the vegetables are done, remove from the oven and sprinkle with fresh thyme and parsley.
