Classic Southern Potato Salad

A delicious take on the classic Southern potato salad with a twist of turkey bacon.

  • 3 pounds potatoes
  • 1 cup mayonnaise
  • 1 tablespoon mustard
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 eggs, hard-boiled and chopped
  • 1 cup celery, diced
  • 1 cup green onions, sliced
  • 6 slices turkey bacon, cooked and crumbled

Instructions

  1. Boil potatoes in salted water until tender, then drain and cool.
  2. In a bowl, mix mayonnaise, mustard, salt, and pepper.
  3. Chop the cooled potatoes and add to the mixing bowl.
  4. Add chopped eggs, celery, green onions, and crumbled turkey bacon. Mix gently.
  5. Cover and refrigerate for at least two hours before serving.

Notes

  • For extra flavor, add pickle relish or diced pickles.
  • Let the potato salad sit for a while to enhance the flavors.
