Coconut Rum (Coquito) Tiramisu

Ingredients

  • 1 cup coconut cream
  • ½ cup coconut rum
  • 2 cups mascarpone cheese
  • 1 cup heavy cream
  • ½ cup granulated sugar
  • 24 ladyfingers
  • ½ cup shredded coconut, toasted

Instructions

  1. In a large bowl, whisk together coconut cream, coconut rum, mascarpone cheese, granulated sugar, and heavy cream until smooth.
  2. Dip each ladyfinger in the coconut rum mixture and layer them in a serving dish.
  3. Spread a layer of the mascarpone mixture over the ladyfingers.
  4. Repeat the process with remaining ladyfingers and mascarpone mixture.
  5. Refrigerate for at least 4 hours, or overnight, to set properly.
  6. Before serving, sprinkle toasted coconut on top.

Notes

  • For a stronger coconut flavor, use more coconut rum.
