Copycat Starbucks Pumpkin Cream Cheese Muffins

  • 1 teaspoon baking powder

  • ½ teaspoon ground nutmeg
  • ½ teaspoon salt
  • ½ cup vegetable oil
  • 1 cup brown sugar
  • 1 cup pumpkin puree
  • 2 large eggs
  • 8 ounces cream cheese
  • ½ cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a bowl, mix together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, whisk together oil, brown sugar, pumpkin puree, and eggs until well combined.
  4. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  5. In a separate bowl, beat cream cheese and powdered sugar until smooth.
  6. Fill muffin liners halfway with pumpkin batter, add a dollop of cream cheese mixture, and top with more batter.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Allow to cool before serving.

Notes

  • For added flavor, consider adding chocolate chips or walnuts to the batter.
