Cowboy Butter Garlic Chicken Tortellini with Fire-Roasted Red Peppers

  • 1 pound chicken breast, diced
  • 1 tablespoon garlic, minced
  • 1 cup fire-roasted red peppers, chopped
  • 1/4 cup butter
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. In a large skillet, melt the butter over medium heat.
  2. Add the diced chicken and cook until browned and cooked through, about 5-7 minutes.
  3. Stir in the garlic and cook for 1 minute until fragrant.
  4. Add the fire-roasted red peppers and seasoning, cooking for another 2-3 minutes.
  5. Meanwhile, cook the tortellini according to package instructions.
  6. Once cooked, drain the tortellini and combine with the chicken mixture in the skillet.
  7. Toss well to combine and heat through.
  8. Garnish with fresh parsley before serving.
