- 4 large sweet potatoes
- 1 cup fresh cranberries
- 1 cup diced apples
- 1/2 cup brown sugar
- 1/4 cup butter
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 cup chopped pecans
- Preheat the oven to 400°F (200°C).
- Wash the sweet potatoes and pierce them with a fork.
- Place the sweet potatoes on a baking sheet and bake for about 45-60 minutes until tender.
- In a saucepan, combine cranberries, apples, brown sugar, butter, cinnamon, and nutmeg over medium heat until the cranberries burst.
- Once the sweet potatoes are cooled, cut them in half and scoop out the insides, mixing it with the cranberry-apple mixture.
- Fill the sweet potato skins with the mixture, top with chopped pecans, and return to the oven for an additional 15 minutes.
