Cranberry Apple Twice-Baked Sweet Potatoes

A comforting and delicious recipe for cranberry apple twice-baked sweet potatoes that combines the sweetness of baked sweet potatoes with tart cranberries and apples.

  • 4 large sweet potatoes
  • 1 cup fresh cranberries
  • 1 cup diced apples
  • 1/2 cup brown sugar
  • 1/4 cup butter
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 cup chopped pecans

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash the sweet potatoes and pierce them with a fork.
  3. Place the sweet potatoes on a baking sheet and bake for about 45-60 minutes until tender.
  4. In a saucepan, combine cranberries, apples, brown sugar, butter, cinnamon, and nutmeg over medium heat until the cranberries burst.
  5. Once the sweet potatoes are cooled, cut them in half and scoop out the insides, mixing it with the cranberry-apple mixture.
  6. Fill the sweet potato skins with the mixture, top with chopped pecans, and return to the oven for an additional 15 minutes.

Notes

  • For a vegan option, substitute butter with coconut oil.
  • Adjust the sweetness by reducing the amount of brown sugar if desired.
