Creamiest Instant Pot Loaded Baked Potato Soup

  • 4 large russet potatoes
  • 1 cup turkey bacon, chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika
  • 1/4 cup green onions, chopped

Instructions

  1. Set your Instant Pot to sauté mode and cook the chopped turkey bacon until crisp. Remove and set aside.
  2. Add diced onion and minced garlic to the pot, cooking until softened.
  3. Dice the potatoes and add them to the pot along with the chicken broth.
  4. Seal the Instant Pot and cook on high pressure for 10 minutes.
  5. Once done, manually release the pressure and stir in the heavy cream and shredded cheddar cheese.
  6. Blend until smooth, and then stir in the turkey bacon.
  7. Season with salt, black pepper, and smoked paprika.
  8. Serve garnished with green onions.

Notes

  • For extra creaminess, you can use cream cheese in addition to the heavy cream.
