Creamy Broccoli Cauliflower Corn

  • 2 cups cauliflower florets
  • 1 cup corn kernels
  • 4 slices turkey bacon, cooked and crumbled
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, bring water to a boil and blanch the broccoli and cauliflower until tender, about 3 minutes. Drain and set aside.
  2. In a separate pan, cook the turkey bacon until crispy. Remove and crumble.
  3. In the same pan, add heavy cream, garlic powder, and onion powder. Stir to combine and let it simmer for 2 minutes.
  4. Add the blanched vegetables, corn, and cheddar cheese. Stir until the cheese is melted and everything is well combined.
  5. Season with salt and pepper to taste.
  6. Top with crumbled turkey bacon before serving.

Notes

  • If you prefer a lighter version, you can substitute heavy cream with a mix of Greek yogurt and milk.
  • This dish can be served as a side or a main course.
