Creamy Salmon Spinach Pasta Dish

  • 8 ounces fettuccine pasta
  • 2 tablespoons olive oil
  • 1 pound salmon fillet
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 2 cups fresh spinach
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup Parmesan cheese, grated

Instructions

  1. Cook fettuccine according to package instructions; drain and set aside.
  2. In a skillet, heat olive oil over medium heat. Add salmon and cook until golden brown, about 4 minutes per side. Remove from skillet and flake into pieces.
  3. Add garlic to the skillet and sauté for 1 minute.
  4. Pour in heavy cream and bring to a simmer. Stir in spinach and cook until wilted.
  5. Add flaked salmon back into the skillet, along with salt, pepper, and Parmesan cheese. Stir until combined.
  6. Toss in the cooked fettuccine and mix until well coated.
