  • 2 pounds baby potatoes
  • 4 strips turkey bacon
  • 1 cup diced chicken ham
  • 1/2 cup mayonnaise
  • 1 tablespoon mustard
  • 1/4 cup chopped green onions
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Boil the baby potatoes until fork-tender.
  2. Preheat oven to 425°F.
  3. Drain the potatoes and let them cool slightly.
  4. Place potatoes on a baking sheet and smash them gently.
  5. Cook turkey bacon until crispy, then crumble over the smashed potatoes.
  6. Mix mayonnaise, mustard, green onions, salt, and pepper in a bowl.
  7. Add chicken ham and combine with the potato mixture.
  8. Bake for 20 minutes or until golden brown.
