Crockpot Chipotle Pineapple Pot Roast Bowl

  • 3 pounds beef pot roast
  • 1 can chipotle peppers in adobo sauce
  • 1 cup pineapple chunks
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 1 cup beef broth
  • 2 tablespoons soy sauce
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. In a large skillet, heat olive oil over medium heat. Sear the pot roast on all sides until browned.
  2. Transfer the pot roast to the crockpot.
  3. In the same skillet, add onions and garlic, sauté until softened.
  4. Add chipotle peppers, pineapple, beef broth, soy sauce, Worcestershire sauce, cumin, salt, and pepper. Stir well.
  5. Pour the mixture over the pot roast in the crockpot.
  6. Cover and cook on low for 8 hours or until the meat is tender.
  7. Shred the pot roast with two forks and mix with the juices. Serve warm.
