  • 3 pounds beef chuck roast
  • 1 tablespoon olive oil
  • 1 onion, sliced
  • 4 cloves garlic, minced

  • 1 tablespoon Worcestershire sauce

  • 1 teaspoon black pepper
  • 8 French rolls
  • 1 cup provolone cheese, shredded

Instructions

  1. In a large skillet, heat olive oil over medium-high heat and sear the beef chuck roast on all sides.
  2. Transfer the roast to a crockpot and add sliced onion, minced garlic, beef broth, Worcestershire sauce, thyme, and black pepper.
  3. Cook on low for 8 hours or until the beef is tender and easily shredded.
  4. Remove the beef from the crockpot and shred with two forks.
  5. Strain the cooking liquid and serve it as au jus.
  6. Slice the French rolls, fill them with shredded beef, and top with provolone cheese.
  7. Serve sandwiches with a small bowl of au jus for dipping.

Notes
