1 cup pumpkin puree
1 cup oat flour
1 scoop vanilla protein powder
2 tablespoons maple syrup
1 teaspoon baking powder
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
2 eggs
1 cup almond milk
4 slices turkey bacon
Instructions
In a large bowl, mix together the pumpkin puree, oat flour, protein powder, maple syrup, baking powder, cinnamon, nutmeg, eggs, and almond milk until well combined.
Heat a non-stick skillet over medium heat and lightly grease it.
Pour about 1/4 cup of batter onto the skillet for each pancake.
Cook until bubbles form on the surface, then flip and cook until golden brown.
In a separate pan, cook the turkey bacon until crispy.
Serve the pancakes warm, topped with crispy turkey bacon.
