6 strips turkey bacon
1 pound ground turkey
1 can kidney beans, drained and rinsed
1 can black beans, drained and rinsed
1 can diced tomatoes
1 cup corn, frozen or canned
1 medium onion, chopped
2 cloves garlic, minced
2 tablespoons chili powder
1 tablespoon cumin
1 teaspoon smoked paprika
2 cups chicken broth
Salt and pepper to taste
Instructions
In a skillet, cook the turkey bacon until crispy. Remove and chop into pieces.
In the same skillet, brown the ground turkey. Drain any excess fat.
In a slow cooker, combine the turkey bacon, ground turkey, kidney beans, black beans, diced tomatoes, corn, onion, garlic, chili powder, cumin, smoked paprika, and chicken broth.
Season with salt and pepper. Stir to combine all ingredients.
Cover and cook on low for 6-8 hours or high for 3-4 hours.
Serve hot and enjoy!
Notes
For extra spice, add diced jalapeños.
