- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1 cup granulated sugar
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 4 packages (8 oz each) cream cheese, softened
- 1 cup pumpkin puree
- 4 large eggs
- 1 teaspoon vanilla extract
- Preheat the oven to 325°F (160°C).
- In a mixing bowl, combine graham cracker crumbs, melted butter, 1/4 cup of sugar, and 1/2 teaspoon of cinnamon. Press the mixture into the bottom of a springform pan.
- In a large bowl, beat the softened cream cheese until smooth. Gradually add remaining sugar, pumpkin puree, vanilla extract, and spices. Mix until well combined.
- Add eggs one at a time, mixing well after each addition.
- Pour the cheesecake mixture over the crust in the springform pan.
- Bake for 50–60 minutes, or until the center is set. Allow to cool before refrigerating for at least 4 hours.
- Serve chilled and enjoy!
