  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 4 packages (8 oz each) cream cheese, softened
  • 1 cup pumpkin puree
  • 4 large eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a mixing bowl, combine graham cracker crumbs, melted butter, 1/4 cup of sugar, and 1/2 teaspoon of cinnamon. Press the mixture into the bottom of a springform pan.
  3. In a large bowl, beat the softened cream cheese until smooth. Gradually add remaining sugar, pumpkin puree, vanilla extract, and spices. Mix until well combined.
  4. Add eggs one at a time, mixing well after each addition.
  5. Pour the cheesecake mixture over the crust in the springform pan.
  6. Bake for 50–60 minutes, or until the center is set. Allow to cool before refrigerating for at least 4 hours.
  7. Serve chilled and enjoy!
