- 1 cup graham cracker crumbs
- 1/2 cup sugar
- 1/2 cup unsalted butter, melted
- 16 ounces cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 1 cup sour cream
- Preheat the oven to 350°F (175°C).
- In a bowl, mix together graham cracker crumbs, sugar, and melted butter until combined.
- Press the mixture into the bottom of muffin tins lined with cupcake liners.
- In another bowl, beat cream cheese until smooth. Gradually add powdered sugar and vanilla extract, mixing well.
- Add eggs one at a time, mixing until just combined after each addition. Add sour cream and mix until smooth.
- Pour the cream cheese mixture over the crusts in the muffin tins.
- Bake for 20-25 minutes, or until the centers are set. Let cool completely before serving.
