Easy Turkey Meatballs in Pumpkin Sage Sauce

  • 1 pound ground turkey
  • 1 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 eggs
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes
  • 1 can (15 oz) pumpkin puree
  • 1 cup chicken broth
  • 1 tablespoon fresh sage, chopped
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine the ground turkey, breadcrumbs, Parmesan, eggs, garlic, salt, pepper, oregano, and red pepper flakes. Mix until well combined.
  3. Form the mixture into meatballs and place them on a baking sheet.
  4. Bake for 20-25 minutes or until cooked through.
  5. While the meatballs are baking, heat olive oil in a saucepan over medium heat. Add the pumpkin puree, chicken broth, and sage. Stir until the mixture is well combined and simmer for 10 minutes.
  6. Once the meatballs are cooked, add them to the pumpkin sage sauce and let simmer for another 5 minutes.
  7. Serve warm over pasta or on their own.

Notes

  • For added flavor, try using fresh herbs.
  • Adjust the spice level by adding more or less red pepper flakes.
