- 1 pound ground turkey
- 1 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 2 eggs
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried oregano
- 1/4 teaspoon red pepper flakes
- 1 can (15 oz) pumpkin puree
- 1 cup chicken broth
- 1 tablespoon fresh sage, chopped
- 1 tablespoon olive oil
- Preheat the oven to 400°F (200°C).
- In a mixing bowl, combine the ground turkey, breadcrumbs, Parmesan, eggs, garlic, salt, pepper, oregano, and red pepper flakes. Mix until well combined.
- Form the mixture into meatballs and place them on a baking sheet.
- Bake for 20-25 minutes or until cooked through.
- While the meatballs are baking, heat olive oil in a saucepan over medium heat. Add the pumpkin puree, chicken broth, and sage. Stir until the mixture is well combined and simmer for 10 minutes.
- Once the meatballs are cooked, add them to the pumpkin sage sauce and let simmer for another 5 minutes.
- Serve warm over pasta or on their own.
