Easy Vegetarian Stuffed Bell Peppers with Rice

A delicious and healthy recipe for stuffed bell peppers filled with rice and vegetables.

Ingredients

  • 4 large bell peppers
  • 1 cup cooked rice
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 cup salsa
  • 1 cup shredded cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a bowl, mix the cooked rice, black beans, corn, chopped onion, garlic, cumin, chili powder, and salsa.
  4. Stuff the bell peppers with the rice mixture and place them in a baking dish.
  5. Top with shredded cheese.
  6. Bake for 30-35 minutes until the peppers are tender.

Notes

  • For added flavor, try adding chopped cilantro or lime juice to the filling.
