Easy Zuppa Toscana

A creamy and nutritious take on the classic Zuppa Toscana, featuring turkey bacon and chicken ham for a healthier option.

Ingredients

  • 4 slices turkey bacon
  • 1 cup chicken ham
  • 4 cups chicken broth
  • 2 cups kale, chopped
  • 1 cup heavy cream
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 medium potatoes, diced
  • 1 teaspoon Italian seasoning

Instructions

  1. In a large pot, cook turkey bacon until crispy. Remove and crumble.
  2. Add onion and garlic to the pot and sauté until soft.
  3. Add the diced potatoes and chicken broth; bring to a boil.
  4. Reduce heat, add kale and cream, and simmer for 10 minutes.
  5. Stir in the crumbled bacon and Italian seasoning before serving.

Notes

  • For a vegetarian version, omit turkey bacon and use vegetable broth.
  • Reheats well but may thicken; add more broth for consistency.
