  • 4 slices turkey bacon
  • 1 pound chicken thighs, boneless and skinless
  • 2 cups apple cider
  • 1 cup diced carrots
  • 1 cup diced potatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon until crisp, then remove and set aside.
  2. Add the chicken thighs to the pot and brown on all sides.
  3. Stir in the onions and garlic, cooking until softened.
  4. Add the carrots, potatoes, apple cider, thyme, and rosemary.
  5. Bring to a simmer and cook for 30 minutes or until the chicken is cooked through.
  6. Shred the chicken and return it to the pot, crumbling the bacon on top.
  7. Season with salt and pepper to taste before serving.
