  • 4 slices of baguette
  • 1 cup grated Gruyère cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large pot, heat olive oil over medium heat and brown the short ribs on all sides.
  3. Add onions and cook until caramelized.
  4. Stir in garlic and thyme, then add white wine and broth.
  5. Bring to a simmer, cover, and transfer to the oven for 2 hours.
  6. Remove from oven, skim fat, and season with salt and pepper.
  7. Toast baguette slices and top with cheese.
  8. Serve soup in bowls and float cheese-covered bread on top.
