Garlic Butter Sweet Potato Stacks

  • 4 cloves garlic, minced
  • 1 tablespoon fresh thyme, chopped
  • Salt to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and slice the sweet potatoes into thin rounds.
  3. In a saucepan, melt the butter and add minced garlic and thyme, cooking until fragrant.
  4. Brush a muffin tin with the garlic butter mixture and stack the sweet potato rounds inside each muffin cup.
  5. Drizzle the remaining garlic butter over the stacks and season with salt and pepper.
