Gouda & Mushroom Stuffed Chicken

  • 2 chicken breasts
  • 1 cup Gouda cheese, shredded
  • 1 cup mushrooms, diced
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon thyme, dried
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add garlic and mushrooms, sauté until soft.
  3. Stir in Gouda cheese and thyme, season with salt and pepper.
  4. Cut a pocket in each chicken breast, fill with the mushroom and cheese mixture.
  5. Season the outside of the chicken breasts with salt and pepper.
  6. Place stuffed chicken in a baking dish and bake for 25-30 minutes until fully cooked.
  7. Let rest for 5 minutes before serving.
