- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon nutmeg
- 1 cup milk
- 1/2 cup pumpkin puree
- 2 large eggs
- 2 tablespoons sugar
- 2 tablespoons melted butter
- 4 slices turkey bacon
- In a large bowl, whisk together the flour, baking powder, salt, cinnamon, and nutmeg.
- In another bowl, combine the milk, pumpkin puree, eggs, sugar, and melted butter.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Heat a non-stick skillet over medium heat and pour 1/4 cup batter for each pancake.
- Cook until bubbles form on the surface, then flip and cook until golden brown.
- In a separate pan, cook the turkey bacon until crispy.
- Serve the pancakes warm with turkey bacon on the side.
Notes
