  • 1 cup pumpkin puree
  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1/2 cup vegetable oil
  • 4 large eggs
  • 8 oz cream cheese, softened

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, combine flour, baking powder, baking soda, spices, and salt.
  3. In another bowl, mix pumpkin, sugars, and oil until smooth. Add eggs one at a time.
  4. Gradually add dry ingredients to wet ingredients.
  5. Pour half the batter into a greased bundt pan. Add cream cheese mixture, then top with remaining batter.
  6. Bake for 50-60 minutes or until a toothpick comes out clean.
  7. Let cool before serving.
