Loaded Baked Potato Casserole

A creamy and cheesy loaded baked potato casserole topped with turkey bacon.

  • 4 large russet potatoes
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup green onions, chopped
  • 1/2 cup turkey bacon, cooked and crumbled
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Boil potatoes until tender, then cool and chop.
  3. In a large bowl, combine sour cream, garlic powder, onion powder, salt, and pepper.
  4. Add chopped potatoes, cheese, turkey bacon, and green onions; mix well.
  5. Transfer the mixture to a greased baking dish.
  6. Bake for 25-30 minutes or until heated through and the top is golden.

Notes

  • For extra flavor, mix in some shredded mozzarella cheese.
  • Can be made ahead and baked just before serving.
