Loaded Potato Salad

A delicious twist on the classic potato salad with loaded toppings.

Ingredients

  • 2 pounds potatoes
  • 4 slices turkey bacon
  • 1 cup chicken ham, diced
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1/4 cup green onions, sliced
  • 1 cup cheddar cheese, shredded
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Boil the potatoes until tender, then cool and chop.
  2. Fry the turkey bacon until crisp, then chop into pieces.
  3. In a large bowl, mix together potatoes, turkey bacon, chicken ham, mayonnaise, sour cream, green onions, cheese, and mustard.
  4. Season with salt and pepper, then mix well.
  5. Chill in the refrigerator for at least one hour before serving.

Notes

  • For a healthier version, use Greek yogurt instead of sour cream.
  • You can add other toppings like diced pickles or hard-boiled eggs.
