Loaded Potato Taco Bowl

A delicious combination of potatoes and taco flavors that satisfies your cravings.

  • 2 large russet potatoes
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/2 cup shredded cheese
  • 1/4 cup sour cream
  • 1/4 cup green onions, chopped
  • 1 avocado, diced

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and poke the russet potatoes with a fork, then bake for 45 minutes or until tender.
  3. While the potatoes are baking, heat olive oil in a skillet over medium heat.
  4. Add black beans, corn, chili powder, cumin, paprika, garlic powder, and onion powder. Stir and cook for 5-7 minutes.
  5. Once the potatoes are done, remove from the oven and let cool slightly.
  6. Cut open each potato and fluff the insides with a fork.
  7. Top each potato with the black bean mixture, shredded cheese, sour cream, green onions, and diced avocado.

Notes

  • For a spicy kick, add jalapeños.
  • Feel free to customize toppings according to your preference.
