  • 2 lobsters
  • 1 cup chopped onions
  • 1 cup chopped celery
  • 1 cup chopped carrots
  • 4 tablespoons butter
  • 1/2 cup dry sherry
  • 4 cups seafood stock
  • 1 cup heavy cream
  • 2 teaspoons salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon cayenne pepper
  • 2 teaspoons fresh thyme

Instructions

  1. In a large pot, melt butter over medium heat. Add onions, celery, and carrots; sauté until soft.
  2. Add the lobsters and sherry. Cook for 5 minutes.
  3. Pour in seafood stock, bring to a boil, then reduce to a simmer for 30 minutes.
  4. Remove the lobsters, shred the meat, and return the shells to the pot.
  5. Simmer for another 30 minutes, then strain the liquid.
  6. Return the strained liquid to the pot; stir in cream, salt, pepper, cayenne, and thyme.
  7. Add the lobster meat and heat through before serving.

Notes
