Louisiana Red Beans and Rice

A classic dish with a twist, featuring turkey bacon for a healthier version.

Ingredients

  • 1 pound red beans
  • 6 slices turkey bacon
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 green bell pepper, chopped
  • 2 stalks celery, chopped
  • 4 cups chicken broth
  • 1 tablespoon Cajun seasoning
  • 2 cups cooked white rice

Instructions

  1. Soak the red beans overnight in water.
  2. In a large pot, cook turkey bacon over medium heat until crispy. Remove and chop.
  3. Add onion, garlic, bell pepper, and celery to the pot and sauté until soft.
  4. Add soaked beans and chicken broth to the pot.
  5. Stir in Cajun seasoning and bring to a boil.
  6. Reduce heat and simmer for 1 to 1.5 hours until beans are tender.
  7. Serve over cooked rice and top with chopped turkey bacon.

Notes

  • Adjust seasoning to taste.
  • For a spicier kick, add cayenne pepper.
