- 1 pound red beans
- 6 slices turkey bacon
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 green bell pepper, chopped
- 2 stalks celery, chopped
- 4 cups chicken broth
- 1 tablespoon Cajun seasoning
- 2 cups cooked white rice
- Soak the red beans overnight in water.
- In a large pot, cook turkey bacon over medium heat until crispy. Remove and chop.
- Add onion, garlic, bell pepper, and celery to the pot and sauté until soft.
- Add soaked beans and chicken broth to the pot.
- Stir in Cajun seasoning and bring to a boil.
- Reduce heat and simmer for 1 to 1.5 hours until beans are tender.
- Serve over cooked rice and top with chopped turkey bacon.

- Adjust seasoning to taste.
