Mac and Cheese Meatloaf Casserole

Delicious and hearty mac and cheese meatloaf casserole that combines creamy flavors with the crunch of turkey bacon.

  • 1 pound ground turkey
  • 8 ounces elbow macaroni
  • 4 slices turkey bacon
  • 2 cups shredded cheddar cheese
  • 1 cup milk
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cook the elbow macaroni according to package instructions; drain.
  3. In a skillet, cook the turkey bacon until crispy, then crumble and set aside.
  4. In the same skillet, sauté the onion and garlic until translucent.
  5. In a large bowl, combine ground turkey, cooked macaroni, crumbled turkey bacon, sautéed onion and garlic, milk, salt, pepper, and Italian seasoning.
  6. Mix in 1 cup of cheddar cheese.
  7. Transfer the mixture to a greased casserole dish.
  8. Top with remaining cheddar cheese.
  9. Bake for 30-35 minutes, until cheese is bubbly and golden brown.

Notes

  • Feel free to substitute ground beef for turkey if you prefer.
  • Add vegetables like spinach or bell peppers for extra nutrition.
