Marry Me Chicken Pasta (Vegan)

A rich and creamy vegan pasta dish that is perfect for date night or any special occasion.

Ingredients

  • 8 ounces penne pasta
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 can (14 ounces) crushed tomatoes
  • 1 cup coconut milk
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups spinach, chopped
  • 1/4 cup nutritional yeast
  • 1 tablespoon fresh basil, chopped

Instructions

  1. Cook the penne pasta according to package instructions until al dente.
  2. In a large skillet, heat olive oil over medium heat. Add the onion and sautƩ until translucent.
  3. Add the garlic and cook for 1 minute until fragrant.
  4. Stir in crushed tomatoes, coconut milk, Italian seasoning, salt, and pepper. Cook for 5–7 minutes, stirring occasionally.
  5. Add the spinach and nutritional yeast, and stir until the spinach wilts.
  6. Combine the cooked pasta with the sauce and toss to coat. Serve warm, garnished with fresh basil.

Notes

  • For a spicier version, add red pepper flakes to the sauce.
  • This dish can be made ahead and reheated easily.
