- 1 pound beef tenderloin, cut into bite-sized pieces
- 1 tablespoon olive oil
- 1 cup mushrooms, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon fresh thyme
- 1 package puff pastry
- 1 egg, beaten (for egg wash)
- Salt, to taste
- Pepper, to taste
- Preheat your oven to 400°F (200°C).
- In a skillet, heat olive oil over medium heat and sauté the beef until browned. Remove and set aside.
- In the same skillet, add mushrooms, garlic, and thyme; cook until mushrooms are browned.
- Roll out puff pastry, cut into squares, and place a spoonful of mushrooms and a piece of beef in the center of each square.
- Fold pastry over the filling and seal edges. Brush tops with egg wash.
- Bake until golden brown, about 15-20 minutes. Serve warm.
Notes
- For a richer flavor, you can add a touch of Dijon mustard to the beef before assembling.
- These can be made ahead and frozen before baking. Just add a few extra minutes to the baking time if baking from frozen.
