Ingredients

Scale
  • 1 pound beef tenderloin, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 cup mushrooms, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme
  • 1 package puff pastry
  • 1 egg, beaten (for egg wash)
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a skillet, heat olive oil over medium heat and sauté the beef until browned. Remove and set aside.
  3. In the same skillet, add mushrooms, garlic, and thyme; cook until mushrooms are browned.
  4. Roll out puff pastry, cut into squares, and place a spoonful of mushrooms and a piece of beef in the center of each square.
  5. Fold pastry over the filling and seal edges. Brush tops with egg wash.
  6. Bake until golden brown, about 15-20 minutes. Serve warm.

Notes

  • For a richer flavor, you can add a touch of Dijon mustard to the beef before assembling.
  • These can be made ahead and frozen before baking. Just add a few extra minutes to the baking time if baking from frozen.
