Monterey Chicken One Pan Orzo

  • 2 chicken breasts
  • 4 strips turkey bacon
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 bell pepper, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon black pepper
  • 1 cup shredded Monterey Jack cheese

Instructions

  1. Cook turkey bacon in a large skillet over medium heat until crispy. Remove and set aside.
  2. In the same skillet, add chicken and cook until browned and cooked through. Remove and set aside.
  3. Add bell pepper, onion, and garlic to skillet; sauté until softened.
  4. Stir in orzo, chicken broth, paprika, Italian seasoning, and black pepper. Bring to a boil.
  5. Reduce heat, cover, and simmer until orzo is cooked.
  6. Stir in cooked chicken, turkey bacon, and cheese. Mix until cheese is melted.
