- 2 chicken breasts
- 4 strips turkey bacon
- 1 cup orzo pasta
- 2 cups chicken broth
- 1 bell pepper, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon Italian seasoning
- 1/2 teaspoon black pepper
- 1 cup shredded Monterey Jack cheese
- Cook turkey bacon in a large skillet over medium heat until crispy. Remove and set aside.
- In the same skillet, add chicken and cook until browned and cooked through. Remove and set aside.
- Add bell pepper, onion, and garlic to skillet; sauté until softened.
- Stir in orzo, chicken broth, paprika, Italian seasoning, and black pepper. Bring to a boil.
- Reduce heat, cover, and simmer until orzo is cooked.
- Stir in cooked chicken, turkey bacon, and cheese. Mix until cheese is melted.
